Oatmeal Recipes With Quaker India For “Bring Your Tastiest Bowl” Contest

I wouldn’t lie, but breakfast is my favorite meal of the day! And nothing says "good morning" like a heartfelt bowl of oatmeal. Since we are always on the go, it becomes difficult to have lavish spreads right in the wee hours and sticking to a good ol smoothie cannot be enough in this Delhi weather. Whether slowly cooked and or blended with fresh fruit, oats provide your body with many benefits. And just incase you are not eating oatmeal for breakfast especially the kids, then you're seriously missing out on a delightful way to add fiber to your body first thing in the morning. Quaker Oats are easy to cook and are rich in dietary fiber.  You can make some amazing breakfasts using these 100% wholegrain food. There’s a lot more that you can do than simply settling in for a steaming bowl of fresh cooked oatmeal to start off your day. When I learnt about “bring your tastiest bowl” contest by Quaker India, I decided to create two simple yet super yummy recipes using Quaker Oats for the same. These are the kind of recipes that your kids will drool on and will leave you feeling overwhelmed each morning!


 Recipe 1 is a summer pudding bowl featuring Mangos, Yogurt, Nuts & Seasonal Fruits!

MANGO ALMOND OATMEAL PUDDING WITH FRESH FRUITS






Ingredients:
1. Ripe Mango, ripe – 2
2. Milk Soaked Quaker Oats– 1 cup in ½ cup milk
3. Almonds – 8-10
4. Yogurt (Curd) – 1 Cup
5. Sugar or Honey – 3-4 tsp
Use fruits like pomegranate, cherries to garnish.

Instructions:
1.     Peel the skin off the ripe mangoes, and cut it into small pieces
2.     Transfer the mango slices in a mixer grinder
3.     Now add the milk soaked oatmeal to the mangoes
4.     Follow it up with 1 cup cold yogurt
5.     Add some crushed almonds to the mix
6.     And finally add sugar/honey

Blend all the ingredients in the mixer grinder till smooth and then pour it in a clean bowl. Add some season fruits like pomegranates, cut mango cubes to the pudding and place the bowl in fridge to cool down for 30 mins.

Garnish using a flower, or colorful cherries for the kids!


Recipe 2 is my take on a classic trifle pudding! It’s healthier, tastier and looks pleasing to thy eyes.

TOASTED OAT AND BERRY TRIFLE 






 Ingredients:

For the Oats
1. Butter- 1 Tsp
2. 1 cup Quaker Oats
3. Pinch of salt

For the cream
1.     Chilled Heavy Cream- 1 Cup
2.     Warm Honey- 4-6 table spoon

1/ 2 Cup Canned Berries (I have used a mix of raspberries & blueberries)

Instructions:

1.     Take a pan over a medium heat and add 1 tsp butter to it
2.     Melt the butter and then add the oats. Cook, stirring frequently, for 4 to 5 minutes. The oatmeal should get a bit powdery yet look coarse
3.     Toast them well but do not let them burn
4.     Take the oats off the heat after 4-5 minutes maximum
5.     Whip the cream until you get firm peaks
6.     Drizzle honey into the cream. To make it more healthy I have added organic honey, you can even add powdered sugar for the same quantity as honey to the mix
7.     Chill the cream until serving

To serve, layer in individual wide glass bowl or a glass jar starting with a bed of toasted oatmeal, then the cream, then the canned berries and repeating it till you achieve a beautiful, layered trifle. Garnish the top of the trifle with some additional canned berries and eat immediately. J
